We are very excited to welcome the multi-talented Will Lyons-Bowman as our February chef and winemaker in residence. We have somehow stumbled upon the brilliant rare combination of someone who knows how to make food and wine.
As Will hails all the way from the South Island, Roses will host Will for a two-night
à la carte residency of his culinary delights alongside the celebratory release of Vita’s 2023 vintage. Have a gander at his kitchen skills over on The Next Meal. Come for wine, come for food or come for both.
We met Will a few years back - very fleetingly at sunrise in Omihi on the Black Estate Vineyard in search of a pair of secateurs. When we realised that he was the maker of one of our favourite wines and one-half of The Next Meal, we knew our paths would cross again. Luckily for you, those paths are now crossing at Roses.
Will has always been surrounded by delicious things. He grew up in a family of food lovers - notably his mum, Sarah, who is the master of resourceful and delectable cooking - which helped set him up for a lifetime of culinary enjoyment.
It was working in restaurants after school that led Will to food writing and the happy discovery of wine. As his lifelong obsession with food and cooking simmered away, his affair with wine began, alongside his infatuation with Italy and its culinary delights and over the years, Will and his wife Jane have made it their mission to spend a decent amount of time cooking, eating, drinking, and camping around the country they are so inspired by.
Will’s last five years have been spent in organic and biodynamic vineyards in New Zealand (Greystone, Millton and Black Estate) and Italy (Olek Bondonio) which has shaped the philosophy of his grape growing and wine-making for his own wine label, Vita.
In the winery and kitchen alike everything is centred around great ingredients transformed simply - something the Italians do well with food and something Will’s favourite vignerons do well with grapes, that is Will’s intention for everything he creates.
Will lives in Ōtautahi with his delightful wife Jane and their two naughty sheepdogs, Mary and Dot.
Will’s favourite flower is the Sunflower.
We donate 5% of all profits to our residents charity of choice.
Will’s charity of choice for this event is the Red Cross for Turkey & Syria.
