WINEMAKER IN RESIDENCE #2

We are thrilled to have Dave of 15 Minute Bottles as our second winemaker in residence and be the first to have the 2022 release of 15 Minute Bottles on offer!

 We met Dave a few years when we were all doing a bit of work for another wine friend - James of Bryterlater...and we’ve stayed in touch ever since.

David is one-quarter of the 15 Minute team, alongside Lana, Tom, and Anne - who dreamt of making wine together whilst all living in Europe.

Their collective exposure to energetic and thought-provoking natural wines, coined the phrase a “15 Minute Bottle.” E.g Gone in 15 minutes...

David came to winemaking the long-way-round.  He started out as a landscape architect, before moving into cooking while living in Berlin. David’s style of winemaking is influenced by the philosophies of the restaurants he worked in, those who play with seasonal and grassroots ingredients. David relishes in the combination of being creative, hands-on, and working collaboratively with Tom, Anne, and Lana, to produce the lively bottles they imagined in the early days.

15 Minute Bottles produces in Central Otago (Tom & Anne) and Waipara (David & Lana). Tom made their first release in 2021, the Test Pots Pinot Noir. 2022 sees the second iteration of that cuvée, plus the addition of three releases from Waipara made by David.

We are thrilled to be the first to present and celebrate this new vintage - before it is even released!
